Aaloo Wada ( Spicy Potato Balls)

Heat one tbs oil in a deep pan on low heat. Add mustard seeds and garlic paste, ginger paste, chili paste, cumin powder, coriander powder, turmeric powder, sugar, salt, lemon juice or citric acid and cilantro paste. Stir with a large wooden spoon and add mashed potatoes. Keep on stirring for a minute to let the potatoes absorb the spices and keep aside. Mix flour, salt, bison and one tbs oil with water to make a thick batter. Add more flour or water to a coating consistency. Shape potato mixture into walnut size balls. Heat oil in a deep non-stick wok on medium heat. Add sufficient oil so as to deep fry all the balls into the oil properly. Cover each ball with the prepared batter and fry a few at a time until golden and crispy on all sides. Place them in a colander to drain away the oil. Fry the remaining balls in the same way. Arrange the fried balls on an absorbent paper-lined plate and serve with ketchup or chutney.
